Pumpkins aren’t just great for decoration, they are also AMAZINGLY nutritious! Roast the flesh and puree it, you can freeze it and use it in soups, smoothies and baked goods this fall and winter!
1. it’s high in antioxidants. Carotenoids are an antioxidant found in pumpkins (you can tell by the orangish red color of the flesh!) – catenoids are important in protecting your body from harsh UV rays, air pollution and wind which can lead to skin damage / aged complexion.
2. it’s good for your skin. Pumpkins contain LOTS of beta-carotene which in the body converts into Vitamins A and C. Vitamins A & C help promote super clear, healthy looking complexion!
3. it’s good for your heart. Pumpkins contain large amounts of potassium, vitamin C and fiber, which have been linked to heart benefits.
– 1 small pumpkin
– coconut oil for greasing
1. Preheat oven to 400 degrees.
2. Cut pumpkin in half and scoop out all the pulp and seeds (reserve seeds to roast later!)
3. Rub coconut oil on the flesh of the pumpkin, place cut side down on a baking sheet with parchment paper.
4. Bake for 45 min or until flesh is easily pierced with a fork.
5. Remove from oven and let cool, remove the skin and place flesh in a food processor.
6. Process pumpkin until smooth – store in an airtight container in the fridge for up to 7 days or freeze for up to a 3 months.
